A.O.C. : Côtes du Roussillon Villages
Varieties : Mourvedre, Syrah, Grenace Noir
Yield : Between 15-20 hectolitres/hectare
Altitude : Between 250 and 350 m
Aspect : Southeast facing land
Vinification : Grapes picked and placed in small boxes for up to 20 kg , hand sorted on the cellar table, destalking, crushed. Vatting for 20 to 30 days, thermo-regulated maceration to preserve all the aromatic potential of the grapes.
Ageing : Ageing in our cellars.
Tasting : The color is a gorgeous purple. The nose reveals intense black fruit and violets. It is fleshy and creamy on the palate. Fleshy vigorous wine with a harmonious finish. This great wine is recommended with red meat.
Serving : Best served at 18°C
Accompaniments : This big wine can be enjoyed with game dishes, a side of grilled beef or even a subtly flavoured veined cheese
