Variety : Maccabeu

Yield : Between 20 and 25 hectolitres/hectare

Altitude : Between 250 and 350 m

Aspect : Southeast facing land

Soil : Sandy-clay soil on black schist, shiny schist, and gneiss from the Agly mountains

District : Vines located near Força Real

Vinification : Grapes hand picked, manually sorted on the sorting table in the cellars then destalked. Cold settling of the juice then thermo regulated fermentation for 10 days until alcohol is added (fortification) then vatted for 21 days under the marc (known as “mutage sur grain”).

Ageing : First ageing period for a minimum of 2 years in large oak casks. The blend is made up from several old
vintages before bottling. The second ageing period is in bottle in our cellars.

Tasting : Attractive amber colour with « partridge eye » pink highlights. Powerful nose of cooked fruit, “garrigue” honey, curry and “rancio” with subtle maderised notes. Delicious entry on the palate, very smooth thereafter, this wine really opens out with a long, lingering finish.

Serving : This « big » wine should be served at between 12 and 15°C

Accompaniment : Goes perfectly with apple tart, or sweet dry biscuits (such an local rousquilles catalanes).. and why not even enjoy it with a good, after dinner cigar ?
