Vinification : Grapes hand picked at optimal maturity, destalked, crushed, then thermo-regulated fermentation and the cap of must is fortified. 5 week maceration under the marc after fortification. Early bottling to limit oxidation.
Ageing : Ageing in our cellars
Tasting : Nice deep, dark garnet colour. Powerful on the nose, with cooked fruit (blackberry) and kirsch with subtle cocoa-like notes. On the palate, the entry is clean and delicious, fleshy with aromas of bigarreau cherry and stone fruit, and subtle and coated tannins. Very long lingering finish.
Serving : This big wine should be served between 12 and 15°C
Accompaniments : Perfect as an aperitif and with desserts such as red fruit tarts or “bavarois”.
