Vinification : Maceration at 10°C during 4 days for a maximum extraction of the fruit then alcoholic fermentation at 25°C during 4 days. Pressing and blending of the first press juice with the drop juice. Malolactic fermentation at 20°C.

Ageing : Wine placed in the cold to promote tartaric precipitations and storage in concrete and stainless steel vats for 18 months.

Tasting notes : Full and round on the palate with ripe fruit aromas. Frank attack and good balance in the mouth with a warm and distinguished finish.

Service : 16°C

Ageing : 5 years and more

Accompaniment : Spicy cuisine, marinated meats and game, strong cheeses.
