Grape Varieties : Carignan (40%), Mourvèdre (40%), Grenache (10%), Syrah (10%).

Soil :  Clayey-limestone 

Aspect : south-east. 

Yield : 20 to 35 Hl/Ha (green harvest)

Source : Vines 5 years old for the Mourvèdre. Vines 30 years old for the Syrah. Vines 50 years old for the Grenache and the Carignan.

Vinification : Hand harvest. Blending carbonic maceration for the Carignan,
Grenache and Mourvèdre for 15 days. Syrah is vinified separatly because it is earliest (15 days vatting time).

Ageing : 8 to 10 years. 

Tasting : This wine presents a beautiful constant and intense red dress. Its nose offers a red fruit bouquet with a cocoa note as well as a beautiful aromatic intensity. The mouth, powerful, is in perfect agreement with the nose. The flavours and savours are assembled and are complementary. Maturing in barrel as well as the concentration and the matter of this wine gave to this wine much smoothness and of elegance. Its length and its aromatic persistence are very interesting.

 Serving : 18/20°C

Accompaniments : We advise you to drink this wine with game, confit de canard,
daube.
