Vinification : Maceration of 25 to 28 days with shedding and regular reassembly and a fermentation at 26/28 ° in order to extract the different aromas and color intensity. Pressing, racking before and after fermentation. Tangential filtration. 

Ageing : In tank.

Tasting : Intense red color almost black. Lightly woody nose with notes of vanilla and roast. In the mouth aromas of red fruit compote, melted tannins and nuances of vanilla.

Serving : 18°C 

Storage : 4 to 7 years 

Accompaniments : Red meat, game, tajines, civets, cheeses
