Vinification : Cold pre-fermentation maceration, pressing, settling by flotation pumps (clarification of the juices before fermentation). Fermentation at low temperature, under draft (all under nitrogen injections for total protection on oxidation) tangential filtration and bottling
Ageing: in tank during 3 to 6mounth
Tasting: Pale yellow color with green reflections. Nose very aromatic and frank with notes of white flowers and citrus fruits. On the palate, very bleb aromatic intensity with a lot of fat and freshness as well as a good length.
Serving : 8 to 10°C
Storage : 2 to 4 years
Accompaniments : shellfish, white meat, cheeses
