Vinification : Cold film maceration from 36 to 48 hours, direct pressing, settling by flotation pumps, low temperature fermentation, racking, tangential filtration
Ageing : in tank during 6 to 8mounth
Tasting : Intense dress with pretty bluish reflections. Powerful nose and very nice aromatic intensity in the mouth on notes of red fruits and raspberries.
Serving : 8 to 10°C
Storage : 3 to 5 years
Accompaniments : The tavel can be enjoyed all year round on exotic dishes, from Asian, Provencal cuisine. It has a rare aging potential and can accompany a whole meal.
